My neighbor's 3 dollar lentil trick changed my Tuesday dinners

Last month, Rosa from apartment 2B saw me staring at the bean aisle and handed me a bag of red lentils she paid 3 bucks for. She said, 'Soak em for an hour, fry em with onions, and you got dinner for two nights.' I tried it with rice and an old carrot, and it stretched one meal into three. Anyone else have a random neighbor tip that became a regular recipe?

Remember to save the soaking water for soup stock, that starchy liquid is liquid gold nobody talks about.

Man, that's a solid tip! I do the same thing but toss in a spoonful of curry powder and a can of diced tomatoes, turns it into a whole different meal the second night. Lentils are basically cheat codes for stretching a grocery run.
