My neighbor's $1 lentil soup made me question my whole meal prep routine
Last Tuesday my neighbor brought over a pot of lentil soup she said cost her about $1.50 total. I was skeptical until she showed me the bag of lentils was $2.29 and lasted for three batches, plus some carrots and celery she got on sale for 50 cents. Meanwhile my usual weekly meal prep of chicken and rice runs me almost $40 at the grocery store. She said she just lets it simmer while she watches TV, no fancy pressure cooker or anything. It honestly tasted better than half the stuff I overpay for. Has anyone else swapped a big protein-heavy prep for something like beans or lentils and actually stuck with it? I'm trying to figure out if I can handle eating that simple for a full week.
Swapped my chicken thighs for black beans twice a week. Just tossed them in the pot with some onions and spices while I did laundry. Saved enough to buy decent coffee, which is my real weakness.
