My attempt at a cheap lentil loaf in Cincinnati turned into a dense, flavorless brick that my dog wouldn't even eat.

I skipped the usual egg binder to save money and used only oats, which taught me that some shortcuts just don't pay off, so what's a good, cheap binder for veggie loaves that actually holds together?

My grandma's recipe uses two tablespoons of tomato paste and a half cup of mashed white beans as the binder. That combo has never failed me.

My last lentil loaf was so bad I considered using it as a doorstop.

Had a brick like that once, hayden_martin29. I fixed it by adding a full jar of salsa right into the mix before baking. The extra moisture and acid stopped it from setting into concrete. Also, pressing a layer of mashed sweet potato on top gave it a crust that didn't taste like cardboard. My last one actually held together on the plate.
