Heard a cashier say 'nobody cooks from scratch anymore' and it stuck with me

It made me think about how my grandma's cheap soup recipes, using a leftover chicken carcass and old veggies, are basically a lost art now. I tried her potato peel broth last month and it was actually good. Do you have any old school 'waste not' tips that still work?

That potato peel broth thing is so real. My mom used to save all the celery leaves and onion skins in a bag in the freezer. When it was full, she'd simmer it with some peppercorns for a killer stock base, totally free. I still do it now. It feels way better than just tossing those bits.

My freezer space is too valuable for onion skins.

Totally get that, freezer space is like gold! I just use a quart sized bag and it hardly takes up any room at all. It's mostly flat until you stuff it with a few weeks' worth of scraps. The flavor boost for soups is honestly unreal, and it makes me feel less wasteful. Once you get a system going, it becomes second nature.
