Mortar started setting up on me in the July heat, learned to mix smaller batches the hard way

Was laying a garden wall in Tucson last Tuesday when the whole mud board went stiff in under 20 minutes and I had to chip it off the blocks with a chisel. Now I mix a half tub at a time and keep a spray bottle handy, but I'm wondering if there's a better way to stretch working time when it's over 100 out.
