Just realized I've been mixing my mortar too wet for years

Overheard a foreman on a site in Omaha say 'if it ain't holding its shape on the trowel, it's gonna sag on the wall' and now I'm kicking myself for every crooked course I've laid since 2019, anyone else have that 'ah man' moment with a basic technique?
