My boss tried to blame me for a server crash I warned him about

Last Tuesday our main server went down for 5 hours costing us about $12k in lost sales. I'd emailed him twice the week before saying the cooling unit was failing. He just wrote back asking if I could prove liability was on him.

And respectfully, I see it a little differently here. You gave him a clear warning in writing and he ignored it, so trying to push the blame back on you feels like a bad faith move. If anything, he should be owning up to the mistake instead of asking for proof of liability (which you already have in those emails).
