Just found out my boss billed 60 hours to a client for a job I did in 3 hours

Was looking through QuickBooks last night cause I'm the one who actually does the work, and saw he logged a whole day and a half on a retaining wall I poured and finished in under 4 hours. How do you guys even confront someone about this without getting fired for going through the books?

Holy crap, 3 hours vs 60 hours is insane. Yeah no wonder you're worried about getting canned for looking at the books, but that's such a huge difference it had to come out somehow. I'd be absolutely furious if I saw my boss pocketing a week's worth of my labor like that. The guy basically stole from you and the client, all while you did the actual work. You gotta have a sit down with him, but maybe frame it like you were just double checking a material list and stumbled onto it by accident. Good luck man, that's a real messed up situation to be in.
