Why does nobody mention wheat paste smells terrible until the third day?

Guy at the bindery supply place in Denver told me flour paste goes sour faster than people admit, and by day 3 my sewing frame project smelled like old bread. Anyone got a paste mix that stays workable longer than 48 hours, or do I just have to deal with it?
