Tried wheat paste instead of PVA on a rebind last week, and the spine came out rock hard

Figured it would stay flexible like the old books do, but the whole thing dried stiff as a board and now it cracks when you open it. Has anyone here had luck with paste on a full leather rebind, or do you only use it for paper repairs?
