Spent 2 hours sewing a text block only to realize I had the grain direction all wrong

I was working on a new novel binding at my kitchen table in Denver and got halfway through the signatures before my spine felt stiff. Turns out I cut all my folios against the grain instead of with it, so the paper won't lay flat. Has anyone else screwed up grain direction on a big project and found a way to fix it without starting over?

my friend did this to a 300 page cookbook and just called it "artistic

Yeah and the thing is, 300 pages of recipes is basically a textbook. So now nobody can find the matzo ball soup recipe because it's buried under a collage of magazine clippings and dried pasta shapes glued to the page. I guess if you're never gonna cook from it again it's fine, but seems like a waste of perfectly good instructions for how to make a roux.
