Why does nobody mention how long sourdough starter really takes
I started my first sourdough starter about 3 weeks ago in my tiny kitchen in Austin, and it took a full 14 days before it even doubled reliably. That first loaf came out like a hockey puck, dense and flat. Has anyone else had a starter that just refused to cooperate for way longer than the blogs say?

Those blog timelines work fine if your kitchen isn't freezing cold. Try keeping it warmer.

My kitchen's more like an icebox than a bakery most days, so my dough just sits there judging me while I shiver. Guess that's on me for not turning up the heat before starting.
