Vent: The new bakery in Portland has a sign that says 'no substitutions' and I think it's a mistake.
I was in Portland last weekend and stopped by this new place called 'Flour Child' on 3rd Street. They had a huge sign right at the counter saying 'Absolutely no recipe substitutions or alterations.' I get it from a quality control angle, but baking is supposed to be personal. My friend has a dairy allergy and couldn't get a single thing. I think a good baker should be able to handle a simple swap like oat milk. It feels less like protecting quality and more like they don't want to put in the extra thought. Has anyone found a good spot that actually welcomes custom orders without making it a huge deal?
