TIL my sourdough starter is exactly 100 days old today

I started it in a mason jar on a whim in early March and just kept it going. It feels like a weird little pet now, and the bread is finally tasting right. Anyone else track how long they've had their starter alive?

That's a solid milestone. My own starter is like a weird roommate I have to feed. Do you ever feel bad when you have to toss the discard? The bread really does turn a corner after that first few months, doesn't it.

Feel bad about tossing it? I just see it as the cost of keeping a healthy culture alive. Makes you wonder if the guilt is about waste or breaking a weird little bond, right?
