Shoutout to my brick-like loaf: Kneading didn't save it
People always stress how important kneading is, but my bread was still dense and hard. The real issue was old yeast that I didn't test.

Yeah, and even WITH good yeast, did you let it proof long enough? A lot of times that's the hidden culprit. Kneading builds structure, but if the yeast isn't given enough TIME to do its job and make those gases, you're just gonna have a strong, dense brick. Was your kitchen cold? That can slow everything way down.

Quinnm90's right about time, but you gotta TEST the yeast first or no amount of proofing helps.
