Rant: I thought sourdough starter was overhyped nonsense, then I made one loaf that actually rose
For 3 weeks my jar just sat there smelling like nail polish and I almost pitched it in the trash. Then a loaf finally doubled in the oven and I'm not gonna lie, I felt like a wizard, so what's the dumbest thing you almost gave up on?
My neighbor gave me a starter back in 2019 and told me it would take about 10 days to be ready. It took almost a month and I kept feeding that thing like a chore. Read somewhere that the nail polish smell means it's still too young and the good bacteria haven't taken over yet. Once it smells like yogurt or beer you're close. That first real rise does feel like magic though, all that waiting finally pays off.
