My switch to a kitchen scale for bread baking
I used to measure all my flour by scooping it out of the bag with a measuring cup. For years my bread came out dense or dry and I never knew why. About 3 months ago my sister saw me baking and told me to weigh everything instead. She said a cup of flour can be anywhere from 120 to 150 grams depending on how you scoop. Now I use a cheap digital scale and my sandwich loaves turn out the same every time. Has anyone else had that moment where they realized their biggest fail was just bad measuring?

tbh that exact thing happened to me like a year ago and it was such a game changer. i used to think my oven was the problem but nope it was just me scooping flour like a disaster. now i just dump the bag into a container and scoop with the scale cup thing, 250g every time no questions asked.

Well holy crap, that's basically the same thing I read in some baking blog a while back. They were going on about how scooping flour from the bag packs it down way more than people realize, and it screws up the whole recipe. Makes total sense now that I think about it, no wonder my bread always came out like a brick.
