My sourdough starter took off after I stopped feeding it every day
I was following those online guides feeding it twice a day and it kept going flat and watery. After 3 weeks of frustration I just stuck it in the fridge and ignored it for 5 days. Anyone else have better luck neglecting their starter instead of babying it?

Yeah I saw something about this on a baking forum recently. Someone was saying that overfeeding can actually mess with the balance of bacteria and yeast in your starter and make it go all watery and sad. Makes sense to me honestly, like they don't need that much attention. I've been kind of doing the same thing with mine where I feed it maybe twice a week and keep it in the fridge most of the time, and it's way more active than when I was fussing over it daily. Maybe it's just my kitchen temp or something but neglecting it really seemed to help.
