My neighbor told me she never preheats her oven for cookies, and my mind is blown

Right? It makes you question everything. I tried it with a basic sugar cookie recipe and they spread way more, got almost too crispy on the bottom before the centers were done. It works for some things, like heating up leftovers, but for baking it seems like a gamble. The science is the oven needs that steady heat to set the dough structure.

Your sugar cookies spread that much in an air fryer?

Gotta disagree a bit here. I've actually had really good luck with cookies in my air fryer, especially if I chill the dough first and drop the temp by 25 degrees.
