My aunt swore her "foolproof" meringue trick would work, ruined 3 dozen cookies

She told me to add a pinch of salt to stabilize the egg whites instead of cream of tartar. Whole batch fell flat and turned into sugary soup. Anyone else get bad advice from family that totally wrecked a bake?

Idk but humidity kills meringue more than salt ever could.

@jason_kelly8 calling me out here? Look, I get that humidity is annoying for meringue, but people act like a little moisture in the air is the end of the world. You can still make decent meringue on a rainy day if you know what you're doing. Add a bit of cornstarch or cream of tartar, keep your bowls dry, and you're most of the way there. Salt only breaks down meringue if you dump in a whole tablespoon or something. It takes real skill to mess up meringue so badly that salt or humidity is the main culprit. Most of the time it's just people not whipping enough or using old eggs.
