My $30 digital scale was a total game changer for my bread.

I used to just scoop flour with a cup and my loaves were always a bit off, sometimes dense, sometimes dry. I finally bought a cheap digital scale and weighed everything for a sourdough, and it came out perfect for the first time. Has anyone else had a simple tool fix a big baking problem?

Oh man, the scale is everything. I had the same issue with my pizza dough being a total crapshoot. Weighing the water, not just the flour, was the real key for me. That little $20 gadget saved so many weekend projects from the trash.

My old bread recipe said "three cups of flour" but my cups were never the same. Once I started weighing, I saw my flour could vary by almost 50 grams just from how I scooped it. That's why my loaves were sometimes bricks and sometimes soup. The scale took the guesswork out and made every batch act the same.
