I've been skipping the chill time for cookie dough and it's working for me.

I never chill my cookie dough before baking, and my cookies come out flat but chewy, which I prefer. Most recipes say to chill, but I'm lazy and it saves time. Should I stick with this or am I missing out?

Patriciar49 is right about doing what you like, but I wonder if chilling matters that much. My cookies are always good without it.

Flat cookies are a baking crime though. You're basically just eating warm dough that's been in the oven.

Honestly if you like them flat and chewy then keep doing it. The chill time is just for texture control, so if you prefer your results then you're not missing anything. It's all about preference, you do you.
