Hot take: weighing flour on a $12 scale beats my grandma's scoop and level method every single time
My grandma baked for 50 years using the scoop and level thing, and she swore the scale was for people who can't bake. I started using a cheap digital scale about a year ago after my third batch of cookies came out flat and cakey. Same recipe, same oven. The scale batch came out perfect and the scoop batch was off by almost 40 grams of flour. I measured it twice to be sure. She still says the scale is cheating.
