Heads up about choosing between cake flour and all-purpose for angel food cake

Honestly, I picked all-purpose to save a trip to the store and my cake came out dense and sad, like a sweet brick, so has anyone else actually had a win using AP flour for something that really needs cake flour?

Ugh, that's the worst. It's like when you try to skip a step in any recipe, you always end up paying for it later lol.

Jump into this with both feet - swapping cake flour is 100% fine and people are WAY overthinking this. I've made cakes with all purpose flour more times than I can count and they turned out totally fine, nobody even noticed. The whole "you MUST use cake flour" thing is just baking snobs trying to feel special about their fancy ingredients. Honestly most of the difference comes down to technique and mixing times anyway, not some magic flour type.
