Cold eggs from the fridge made my best cake yet

All the baking guides say room temp eggs are a must, but I threw in cold ones for a vanilla cake last night. It rose perfectly and stayed super moist. Maybe we should question these so-called rules more often.

Half these baking rules are just old habits, huh? Guess I've been warming up eggs for nothing this whole time, what a scam.

I read in a food science book that egg temp doesn't really make a difference for most home bakers, so you're right @jamie_clark. Turns out it's one of those MYTHS that just won't die.

Wait, you actually baked a cake with eggs right out of the fridge? Every recipe I've ever seen screams about room temperature eggs. I always thought cold eggs would wreck the batter and make it dense. But your cake rose perfectly and stayed moist? That blows my mind. Maybe half these baking rules are just old habits nobody bothered to check.
