Changed my tune on mixing methods after a flat cake disaster

I used to just dump all the wet ingredients together without creaming the butter and sugar first. My cakes were always a bit dense and sometimes flat. Now I take the time to cream them properly, and the difference in texture is night and day.

But I've seen cakes turn out just fine without all that creaming. Sometimes the extra step feels like a hassle for not much gain. @olivia_morgan8, you called it weird, but it might be more about the recipe than the method. A good batter can come together quickly and still rise well. I've had success with simpler mixes, so maybe it's not always night and day.
