Baked my first sourdough boule that actually looked like bread, not a pancake
I drove down to that bakery in the industrial part of town, the one that smells like sourdough for blocks, and watched them score loaves for 20 minutes. Took that confidence home and finally got a decent ear on my own loaf after maybe 8 tries. Anyone else pick up tips just by watching someone else work?

Watching bakers work really is magic... my friend stood outside a bakery for an hour just to see how they did it.

Watching someone else work is pretty useless for learning hands on skills. I learn way more from bungling through it myself and figuring out what went wrong. That ear you got probably happened because you accidentally had your oven hot enough or your scoring angle just happened to work out. Bakery ovens are nothing like home ovens and their flour is completely different. Honestly I think people obsess too much over watching experts when they should just be making more mistakes faster.
