Update: I used to think sourdough was a huge pain, but a demo at the state fair last year totally changed my mind.

That demo sounds awesome. My neighbor got into sourdough after a class too, and she said the trick is keeping the starter in the fridge. It only needs feeding once a week that way, which is way less work than I thought.

Oh man, that fridge tip is a total game changer. I was killing my first starter because I tried to keep it on the counter and kept forgetting to feed it. Putting it in the fridge made it so much easier to actually keep alive.
