TIL the best bake of my life came on the worst week, and I still can't figure out why
Two weeks ago my oven thermostat died on a Tuesday, so I baked 14 loaves of sourdough in a borrowed 20 year old countertop oven set to 450 and guessed on every single time. Every loaf came out with a better crumb than anything I ever got from my big oven, and I sold out at the Saturday market in under an hour. Now I'm arguing with myself: was it the crappy oven, the fact that I stopped overthinking it, or just dumb luck? Half of me wants to buy a cheap oven on purpose and the other half says one good week doesn't mean anything. Has anyone here tracked a streak like this and figured out what actually caused it?
