That $45 banneton was worth every penny, I used to think it was fake hype
I fought using a proofing basket for years, just used a mixing bowl and towel. Then I saw a 70% hydration dough hold its shape perfectly at a class in Chicago and finally bought one, now my loaves don't flatten out. Anyone else have a tool they resisted forever and then instantly regretted not buying sooner?
