Switched to a digital kitchen scale and my bread finally turned out right

Used to measure flour by scooping cups for 2 years and my loaves were always either too dense or too flat. Got a $15 scale from Target last month and the difference in crumb texture is night and day. Anyone else have their baking improve after ditching volume measurements?

Read somewhere that even professional bakers weigh their ingredients because flour can pack down so differently depending on how you scoop it. That totally explains why my loaves were such a gamble every time. I used to think a scale was just extra fuss for people who were too picky, but now I get it. Now I just dump flour right into the bowl until the number hits the right grams and it's so much faster than washing measuring cups too.

Yeah, same. My cookies stopped spreading into blobs once I got a scale.
