Sourdough starter vs commercial yeast, picked the starter and lost a week
Tbh I finally gave up on the wild yeast route after 9 days of flat, sticky loaves in my Portland kitchen. Switched back to instant yeast for Saturday's bake and got a decent crumb in 4 hours flat. Anyone else find starters just aren't worth the fuss unless you're baking daily?

Saw a baking blog say starters really shine after like 6 months of daily feeding, which is basically a part time job. Instant yeast gets the job done for weekend bakes, no contest.
