My sourdough starter came out flat until a baker told me to stop feeding it at night.

I spent 6 weeks getting dense loaves from my starter and almost gave up. Then an old timer at the farmers market said feed it in the morning instead so the yeast has all day to wake up. Has anyone else had timing mess with their starter like that?

Timing fixes things" - yeah, tell that to my first sourdough starter. I named it Doughbie because it was flat and lifeless like a deflated balloon. I tried feeding it at midnight like some kind of bread vampire. The yeast just slept through it. Switching to morning feeding was like waking up a grumpy teenager with coffee. Now Doughbie actually bubbles up and gets puffy. My wife says I overthink everything, including bread. But honestly, a morning routine saved my baking ego.
