Just realized I've been killing my sourdough starter for 2 years
I was at a bakery in Portland last week and the baker asked how I feed my starter. I told her I just dump the discard and pour in fresh flour and water. She looked at me funny and said 'you're supposed to let it eat for like 4 hours before you feed it again.' My mind was blown. Turns out I was starving the bacteria by not timing my feedings right. Has anyone else missed something this basic for way too long?

If you've been starving it for two years, it's probably developed some kind of rebellious survival mode where it just doesn't care about normal feeding schedules anymore. Like it's been eating its own dead cells out of spite. You might have accidentally created a starter that only works on a chaotic feeding schedule, which could be the new trend artisanal bakers will charge $200 for in three years. Just call it 'disruptive fermentation' and watch the hipsters line up.

disruptive fermentation" lmao that's honestly how everything works now. i swear my phone battery has learned to last longer when i ignore it completely, like it's holding a grudge. my houseplants thrive on pure neglect too. the ones i water on a schedule die, but the ones i randomly dump leftover coffee in? unstoppable. maybe we're all just accidentally mastering chaos theory without even trying.
