I was convinced my sourdough starter was fine in the fridge for a month, then a baker from Boise told me I was basically making zombie bread.

Zombie bread? That's a new one. I've left my starter in the fridge for six weeks before and it came back fine after a couple of feeds. What exactly is a baker from Boise doing to his starter that makes a month in the fridge some kind of horror show? Sounds like he's overcomplicating things.

Read somewhere that the hooch can get pretty funky if you don't stir it back in before a long fridge nap. Maybe that's the zombie part?

Six weeks in the fridge and it bouncing back after a couple feeds sounds totally normal to me. I've pushed mine closer to two months without feeding and it woke up fine, just needed a little extra attention. The whole zombie bread thing feels like one of those internet scare stories that sounds dramatic but doesn't really hold up in practice. Hooch gets dark and smells like acetone but it's not going to turn your loaf into something from a horror movie.
