Found a weird trick for defrosting butter in 3 minutes flat
I was testing a new croissant recipe and needed soft butter fast, so I grated it on a cheese grater instead of waiting. It worked way better than the microwave, no melted spots or weird texture. Any of you guys tried grating cold butter for baking?

Did you see that Alton Brown tip about grating frozen butter for biscuits too?

Oh man, the frozen butter trick is an absolute game changer. I tried it last weekend after seeing that same tip and my biscuits turned out way flakier than usual. The cold butter grates so fine it just melts into little pockets in the dough instead of making it tough. I even went overboard and tried it with frozen cream cheese for scones once, worked just as good. Honestly I don't think I'll ever go back to cubing butter again for this stuff.
