Found a tiny bakery in Leadville, CO doing sourdough in a 100 year old wood oven
Took a drive up to Leadville, CO over the weekend and ducked into this little bakery that's been running out of a 100 year old wood fired oven since the 1930s. The owner let me peek at their starter, which she said is 14 years old and gets fed twice a day with local rye. What got me was their loaf schedule: they only do 40 loaves a morning and sell out by 9am, so people line up at 7. I've been chasing a decent crust for a while and hers had that blistered, dark bake I can never nail. Anyone here bake in a wood oven and have tips on keeping the temp steady?
