Overheard a contractor say 'you always demo twice' and it hit hard

I was grabbing parts at Rexel in Portland last week and heard a contractor tell a counter guy that his rule for old remodels is you always demo twice, once to see the mess and once to actually plan the order. That stuck with me because my garage workshop build sat half-finished for 14 months, I kept tearing down my own partial framing because I never mapped out the electrical first. Has anyone else found that you need to do a throwaway pass on planning before the real work, or am I just bad at estimating?
